Arugula Chicken Salad

Serves 1

Ingredients

  • ½ bag arugula or mixed salad leaves of your choice
  • 1 cooked skinless chicken breast, cut into small pieces
  • 2 teaspoons pine nuts
  • 1 handful of cherry/baby tomatoes halved
  • ¼ of a cucumber, diced
  • Balsamic vinegar and a dash of olive oil
  • Ground black pepper to taste

Directions

  1. Add all the salad ingredients together (except the balsamic vinegar and olive oil).
  2. Toss.
  3. Drizzle with balsamic and olive oil.
  4. Serve.
